“Fast food sushi” usually doesn’t invoke much confidence, but Uptown Yonge newcomer Sushi Shop delivers satisfying freshness and taste.

Travellers to Quebec will recognize the circular fish logo, where Sushi Shop operates nearly 100 stores. There’s nothing formulaic about the restaurant, though: it’s simultaneously sleek and inviting, with a white marble bar softened by bamboo accents on the walls. Customers can sit at tables or the bar to eat in, or choose from daily-made takeout options from the large refrigerated display.

Order from the menu, and most selections will be prepared fresh while you wait. The focus is clearly on rolls: the usual stalwarts are represented, but rolls like the Exotik (shrimp and crab with pineapple and mango) or the rainbow coloured three fish Emperor keep palates and eyes amused. A focus on freshness is clear, with each bite a satisfying combination of crisp and buttery, and served at a just-right cool (not cold) temperature. Simple, unadorned presentation on real tableware elevates the experience to higher-end downtown sushi bars. And vegetarians fear not: the menu is clearly labelled with veggie, as well as cooked fish options.

For sheer convenience, Sushi Shop is a winner, but with quality like this, repeat visits are easily justified. Expect the neighborhood to notice and the lunchtime and after-work queues to build.
